So, Ryan and I are starting a tradition where we bake a pie every Sunday. We've been planning on doing this for the past month or so and we've made a couple pies (and when I say "we" I mean me, with a very supportive Ryan) here and there, but now that I have all my pie baking supplies (thanks Mark and Kris:)) we're very motivated to have pie every Sunday. I'm a little late in posting, but last Sunday we made a Butterscotch Pie.
Ryan got a 100% on his Book of Mormon test; it may sound like a gimme but those tests can be pretty specific and a little tricky. So, instead of baking another treat in addition to the pie we decided he'd pick what pie we'd make. He picked the Butterscotch Pie because he loves butterscotch. It sounded really good; all the flavor was going to come from the butter and scotch. But, we weren't going to buy scotch, especially just so we could have 1 tablespoon of scotch for our recipe. So, at the store I looked for either butterscotch flavoring or rum flavoring. I only found the imitation rum flavor; so that's what we used.
Also, instead of grabbing vanilla sandwich cookies, I accidentally grabbed peanut butter sandwich cookies for the crust. I used them anyway and what we turned out with was a PeanutButter Rum Pie. It was soo good! We've decided it's going to be an Anderson classic. =) Every recipe in our pie cookbook calls for freshly whipped whipping cream; it makes all the difference.
